December was even more busy than it normally is, as we made build-out and equipment progress at an accelerated rate. Let’s look at a sampling of what happened at the Two Ass Brewing Company at the end of 2023!
More Paint!
As we finish areas of the building with walls/ceiling/floor, we are able to paint and get things generally in order so we can begin installation of actual brewery and taproom gear. A chunk of December was focused on the front of house. Gone were the sickly greens and in were warm colors:
Outside Work Yard Gear
December saw the arrival of some of the critical initial brewery gear. We will be storing our grain and mill, as well as some other raw material in our 24′ weather resistant storage container. This gives us some much needed storage in the work yard right outside the brewhouse area.
Outside of the container are pads for our glycol chiller unit (thanks to G&D Chillers) and our CO2 tank from system from TapsCO2:
Plumbing!
Plumbing work continued with both brewery specific work for glycol lines and CO2 (hard piped copper work) and doing the wet side of the new bathroom suite. We were able to get our rough inspection for the new construction at this point (and passed!). Next month we’ll be buttoning up all of the walls.
Moving Some Air
In addition to new HVAC throughout the brewery, we added some air circulation with an initial stylish new fan. This thing is really cool.
The Cellar!
Finally, our actual brewing gear started to arrive. Our initial 7 barrel (BBL) conical fermenters (3) and single brite tank made an appearance. We’ll also be moving our 1BBL pilot system tanks to be next to the 7BBL brite later on. The taproom will be co-located where the cellar (fermentation and brites) are during the initial phase of the brewery. It will be a cool visual as you will be able to see easily where the beer is made!
We are in good shape as we roll in to 2024. Work is already underway as we post this on finishing the process-oriented plumbing, building the cold room and initial draft system for the bar, and drywalling the new walls. Stay tuned for January’s update!
